Week 2

Monday :  Arugula salad with salt and pepper baked tofu over top, with green dragon sauce from Trader Joes

Tuesday : Tacos with beans, radishes, cheese, tomatoes

Wednesday : Bun-less frozen black bean burgers with cheese, red onion, pickles, tomatoes, arugula. Baked sweet potato on side, 1/2 per person, one whole one.

Thursday :  Pasta, 180 grams for two people. Bell peppers, olives, cherry tomatoes, snap peas, frozen broccoli, olive oil, parm.

Friday : Stir fry with tofu, frozen broccoli, ginger, frozen edamame, frozen bell peppers

Saturday :  Eggplant parmesan bake. Tomato sauce, ricotta, parm.

Sunday : Mexican-inspired pizza. Beans, cheese, scallions, arugula, tomatoes, salsa, sour cream, guac.

LUNCHES : Quinoa/buckwheat, arugula, radishes, red onion, fresh bell peppers, celery, zucchini, indian spices
