Monday :  Spinach and Edamame Patties with Kalamata Olive, Tomato, parsley, and Carrot Salad

Tuesday : Bean, cheese, spinach quesadillas

Wednesday : Lemon, salt, pepper, baked tofu squares over spinach, goat cheese, red onion, walnut salad

Thursday :  3.5 oz pasta with Rao’s tomato sauce with sauteed shredded carrots, yellow bell pepper, radishes, and any leftover spinach

Friday : Pizza night! Asparagus, mozarella, red onion, walnut with red sauce.

Saturday : Steel cut oat risotto (1/2 cup dry) with frozen peas, remainder of asparagus, lemon juice with brussel sprouts on top

Sunday : Indian veggies, Madras lentils packet, quinoa/brown rice packet

LUNCHESBaked lasagna rolls with spinach, mushrooms, carrots
