Week 8

Monday :  Sweet Potato Hash with sweet potatoes, red bell pepper, onion, parsley, and field roast/tofurkey sausage.

Tuesday : Avocado toasts with goat cheese with corn on the cob (frozen) with tofurkey on the side

Wednesday : Vegetable quesadillas with green pepper and mushrooms

Thursday :  Falafel salad with falafel, cucumber, tomatoes with tahini dressing

Friday : PIZZA with mozarella, ricotta, basil, and caramelized red onion

Saturday :  Baked Mac and Cheese (3.5 oz pasta) with cheddar cheese with brussel sprouts

Sunday : Madras lentils and quinoa

Snacks/Lunch: String cheese, sandwiches with cheese and tofurkey, bananas, apples, peaches
