Spinach and Edamame Patties in under 45 minutes

I was sitting at home the other day and feeling particularly lazy about dinner. Not to mention I didn’t have any fresh vegetables in the fridge that I could make a meal with. So, I turned towards my freezer. I had spinach and edamame. So I pulled them out and made these patties with spinach, edamame, cheddar cheese, goat cheese, two egg whites, and breadcrumbs. So easy, so delicious. Paired it with a tomato, kalamata olive, parsley, and carrot salad because well…these patties were so easy I had time to make them, the salad, and clean the kitchen in under 45 minutes.

I definitely will be adding these to our weekly menus.

Spinach and Edamame Patties

1.5 cups frozen spinach, thawed, as much water as possible squeezed out
1 cup edamame, thawed
6 ounces goat cheese
0.5 cups cheddar cheese
0.25 cups bread crumbs
2 egg whites
Salt
Pepper
Smoked Paprika
Olive oil for pan frying

 

Pull all the ingredients together in a food processor and process until smooth. Dump it out into a bowl. Take heavy bottom saute pan or a cast iron pan and heat up 2 tablespoons of olive oil (enough to coat the bottom of the pan). Fashion patties out of the spinach-edamame mixture. Put them on the oil and turn the heat to medium. Cook them for about 3 minutes per side (or until you are comfortable with the crispiness). Pull them off and allow them to drain excess oil on a paper towel. Do this for all the patties. I served it with Tahini drizzled on top with a little extra salt and a tomato, kalamata olive, parsley, and carrot salad on the side!
